4 ozMargarineDrizzle: 6 ozSelf Raising Flour2 ozGranulated Sugar 6 oz Castor sugarJuice of 1 lemon 4 tbspMilk Grated rind of 1 lemon 2Eggs Mix together all ingredients, place in a lined loaf tine.Gas mark 4/350C for 45 mins. Drizzle:Bring the sugar and lemon juice to boil then leave to cool. Pierce top of cake then pour drizzle over.
Using the following recipe: Put the following ingredients into a saucepan and simmer for 15 minutes: 6oz margarine 4oz sugar 1lb mixed fruit one heaped teaspoon mixed spice one level teaspoon of bicarbonate of soda one cup of water
Pour into a large mixing bowl and allow ingredients to cool.
Mix separately in a bowl:
2 beaten eggs
4oz self raising flour 4oz plain flour
Pinch of salt
Once mixed add to cooled ingredients and stir
Grease an 8 inch round or 7 inch square cake tin and add mixture
Cook for 1 hour 40 minutes Gas Mark 2/ 150C
For a richer taste, try using free range eggs, if possible from your own chickens or a friends!
